Porkkanalaatikko, a traditional Finnish dish, has its roots deeply embedded in the cultural heritage of Finland. Historically, carrots were a staple crop in Finnish agriculture, particularly during the colder months when fresh produce was scarce. With abundant carrot harvests, inventive cooks developed recipes to utilize this versatile vegetable in various dishes. Recipe:
1. Preheat the oven to 175°C.
2. Peel and cut carrots in 2 cm thick pieces. Boil them in lightly salted water for 10 mintues.
3. Let 100 grams breadcrumbs (for 10 servings) soak in cream.
4. Drain the carrots but save the liquid. Mash or blend the carrots.
5. Mix breadcrumbs/cream, mashed carrots, syrup, ground ginger, white pepper, and season with salt.
6. Lightly beat the egg and add it.
7. Thin the mixture with the reserved liquid to a loose consistency.
8. Pour the mixture into an ovenproof dish, about 20 x 30 cm (for 10 servings).
9. Sprinkle with 3 tbsp breadcrumbs (for 10 servings).
10. Place butter pats on top and bake the casserole for 1 1/2-2 hours.
The casserole can be frozen.
