Pönnukökur, or Icelandic pancakes, are a beloved staple of Icelandic cuisine. These pancakes are typically thin and light, similar to crepes. What sets Icelandic pancakes apart is their versatility in serving. While they can be enjoyed plain or with a sprinkle of powdered sugar, they are often served with an array of toppings such as whipped cream, jam and berries.
Beyond their culinary appeal, Pönnukökur hold a special place in Icelandic culture, often enjoyed during festive gatherings, holidays, and special occasions. Sharing a stack of warm Pönnukökur with loved ones fosters a sense of togetherness and celebration, making them a cherished part of Icelandic culinary traditions.
Recipe:
1. Mix the flour with baking soda and salt, add half of the milk, and whip until
smooth.
2. Add the eggs, vanilla extract, and the rest of the milk.
3. Melt the butter in a small pot and add to the mix.
4. If you like, you can add a tablespoon of coffee. It adds to the taste and makes
the Icelandic pancakes browner.
5. Once cooked, serve rolled up with some sugar.
It’s also nice to leave part of the pancakes flat and serve them with fruit jam and whipped cream. Then you take one, put jam and whipped cream, and fold them first in half, then again in half, looking like a quarter of a plate.
