"Pølse med lompe" is a traditional Norwegian dish commonly enjoyed as a snack or a light meal. The dish consists of a sausage (pølse) wrapped in a soft, unleavened potato flatbread called "lompe." It's a popular street food item in Norway, often served at festivals, sporting events, and convenience stores.
Here we are using mini sausages for a fun variation of the traditional dish, making it more bite-sized and more suitable for serving as an appetizer or party snack.
Recipe:
1. Boil the potatoes with the skin on. Peel them and mash.
2. Add the remaining ingredients, but be careful with the amount of wheat flour so that you can adjust to the right consistency of the dough.
3. Knead the dough until it forms a firm consistency and divide it into 20 parts.
4. Prepare a surface for rolling out and dust it with flour. Roll out the dough thinly with a rolling pin.
5. Heat 2-3 frying pans without butter and fry the bread until they have brown spots on both sides.
6. Place the finished lompers in a towel to retain warmth and moisture.
7. Fry the mini sausages in a hot pan with oil, or boil in water to cook. Once thoroughly heated through, serve rolled up in lompers with ketchup, mustard, pickled gherkins and roasted onions.

60 grams wheat flour / 小麦面粉
60 grams rye flour / 黑麦面粉
30 grams flour for rolling out / 面粉(用于擀面)
