Raggmunk med fläsk is a classic Swedish dish that translates to "potato pancakes with bacon" in English. It consists of thinly grated potatoes mixed with flour, eggs, and milk, then fried until golden brown and crispy. The accompanying bacon is typically fried until crispy and served alongside the raggmunk. This hearty and flavorful dish is often enjoyed with lingonberry jam, adding a delightful balance of sweetness and tanginess to the savory pancakes and bacon. 


Instructions


1.Preheat the oven to 125°C and place a tray inside.


2. Whisk the flour with half of the milk into a smooth batter in a bowl.


3. Whisk in the remaining milk, eggs, and salt.


4. Peel and coarsely grate the potatoes. Squeeze out the liquid and immediately fold it into the batter to prevent discoloration.


5. Shred and crisp the pork belly in a frying pan. Transfer it to the tray in the oven to keep warm.


6. Heat some of the pork fat in a frying pan and spoon the batter to make pancakes. Fry the pancakes in batches and keep them warm on the tray in the oven.


7. Peel and cut the carrots into sticks.


For serving: Serve the pork with potato pancakes, carrots, and lingonberry jam.

  • 120 grams wheat flour / 小麦面粉

  • 400 ml milk / 牛奶

  • 2 eggs / 鸡蛋

  • 1/2 teaspoon salt / 盐

  • 900 grams firm potatoes / 马铃薯

  • Approximately 375 g sliced cured pork belly / 切片腌制的五花肉

  • 2 tablespoons butter or margarine / 黄油或人造黄油

  • 3 carrots / 胡萝卜
