These soft and pillowy sweet bread rolls, beloved for their simplicity and versatility, are a staple on breakfast tables and coffee breaks across Norway and Denmark. Recipe:


1. Cut the butter into cubes and let it temper while kneading the dough.


2. Place wheat flour, sugar, yeast, salt, and cardamom in a mixing bowl.


3. Add milk (heated to 37 degrees). Reserve 50 ml, and add more milk gradually if the dough seems too firm.


4. Knead the dough by hand or in a stand mixer for 15 minutes.


5. Add the butter and continue kneading the dough for about 10 minutes, until it is soft and elastic. 


6. Knead the raisins well into the dough.


7. Cover the dough and let it rise in a warm place until it has doubled in size, about 45-60 minutes.


8. Divide the dough into appropriately sized portions. You will get about 24 rolls from one batch of dough. Shape them into round balls.


9. Place the rolls on a baking sheet lined with parchment paper and let them rise (20-30 minutes).


10. Brush the rolls with egg and bake them in the middle of the oven at 225°C for 6-10 minutes. Allow the rolls to cool on a wire rack.

•1 kg wheat flour / 面粉

•150 g sugar / 糖

  • 16 grams instant dry yeast / 酵母

•0.5 tsp salt / 盐

•2 tsp ground cardamom / 磨碎的豆蔻

•600 grams milk / 牛奶

•400 grams raisins (optional) / 葡萄干

•1 beaten egg for brushing / 鸡蛋
