Swedish cinnamon buns, or "kanelbullar," are a beloved pastry in Sweden, often enjoyed during fika, a traditional coffee break. These soft, buttery buns are filled with a sweet cinnamon sugar mixture and rolled into a classic spiral shape. Topped with pearl sugar or chopped almonds, they're perfect for sharing with family and friends. Don't forget to celebrate Kanelbullens dag (Cinnamon Bun Day) on October 4th by baking a batch of these delightful treats.




Instructions


Dough:

1. Dissolve the yeast in lukewarm milk.

2. Melt the butter and add it to the yeast mixture.

3. Add granulated sugar, a pinch of salt, and gradually mix in the wheat flour until you have a smooth dough.

4. Cover and let it rise until it doubles in size, about one hour. 


Filling:

1. Mix room-temperature butter, ground cinnamon, and granulated sugar until well combined.


Assembly:

1. Roll out the dough into a rectangle on a floured surface.

2. Spread the filling evenly over the dough.

3. Roll the dough into a log and cut it into about 20 pieces.

4. Place the pieces on a baking sheet with parchment paper.

5. Preheat the oven to 225°C.

6. Let them rise for an additional 15-20 minutes.

7. Brush with beaten egg and sprinkle pearl sugar on top.

8. Bake in the preheated oven for about 10-12 minutes or until golden brown.

Ingredients


Dough:

  • 3 tsp/10 grams instant dried yeast / 酵母

  • 50 grams butter or margarine / 黄油或人造黄油

  • 300 ml milk / 牛奶

  • 50 grams granulated sugar / 白砂糖

  • A pinch of salt / 一撮盐

  • 800 grams wheat flour / 小麦面粉


Filling:

  • 100 grams room temperature butter or margarine / 室温黄油或人造黄油

  • 1 tablespoon ground cinnamon / 一勺肉桂粉

  • 100 grams granulated sugar / 白砂糖


Eggwash:

  • Egg / 鸡蛋

  • Pearl sugar / 珍珠糖
