Sveler, a beloved Norwegian treat, are reminiscent of fluffy pancakes but with a unique twist. These delightful delights are a staple of Norwegian cuisine, often enjoyed during festive occasions, such as summer picnics or winter celebrations. Sveler are made from a batter that typically includes flour, eggs, sugar, buttermilk, and baking powder. This batter is poured onto a hot griddle or skillet, creating thick and airy pancakes with a slightly crispy exterior.
Ingredients:
2 eggs / 鸡蛋
90 grams sugar / 糖
180 grams wheat flour / 面粉
1 teaspoons baking soda / 小苏打
A pinch of salt / 盐
500 grams kefir or buttermilk / 克菲尔 or 酪乳
(Buttermilk can be made by combining 2 tablespoons of lemon juice or vinegar into 500 grams of milk)
Butter for frying and serving / 黄油
Recipe:
1. Mix flour, baking soda, and salt in a bowl.
2. Whisk eggs and sugar until pale and fluffy.
3. Sift the flour mixture alternately with the buttermilk into the egg mixture - gently fold to keep the batter airy.
4. Let the batter rest for 20 minutes.
5. Heat the griddle or a frying pan on medium high.
6. Add a knob of butter to the griddle or the pan.
7. Place a scoop of batter in the pan once the butters melted and bubbly.
8. When the batter has set, flip the pancake. It should be cooked through and golden brown - like a pancake.
9. Serve buttered up, with jam, fresh fruits, whipped cream, or sugar and lemon juice.
