Stegt flæsk med persillesovs, a traditional Danish dish, consists of crispy slices of fried pork belly served with a creamy parsley sauce. Recipe:
1. Peel and boil the potatoes in salted water.
2. Meanwhile, melt the butter for the sauce in a saucepan.
3. Stir in the flour thoroughly.
4. Gradually whisk in the milk and cream, and bring to a boil while whisking.
5. Simmer over low heat for 3–5 minutes, whisking occasionally. Be careful not to let the sauce burn at the bottom.
6. Chop the parsley and add it to the sauce. Season with salt and pepper to taste.
7. Start the bacon/pork belly in a cold pan. Fry until crispy. No need to add additional oil for frying.
8. Drain the water from the potato pot and serve the fried pork belly with the freshly boiled potatoes and parsley sauce.
Ingredients:
400 g pork belly, sliced, cured / 咸猪肚, 切片, 腌制
800 g potatoes / 土豆
Parsley sauce:
50 g butter / 黄油
3 tbsp wheat flour / 小麦面粉
4 dl milk, at least 3% / 牛奶,至少3%
1 dl heavy cream / 动物奶油
1 bunch parsley / 欧芹
Salt / 盐
Freshly ground white pepper / 新鲜白胡椒粉
