Recipe:
1. Boil and peel the potatoes.
2. Poach your white fish according to instructions. Put aside.
3. Sauté onions in butter at medium heat until translucent.
4. Add flour to the butter and onions, whisking until it becomes a paste.
5. Whisk in milk – a ladle at a time until it forms a thick sauce. Congratulations, you've made béchamel!
6. Break up the potatoes and fish and add them to the mixture.
7. If you've used up all the béchamel and feel it's still too thick, you can add milk or the poaching water to thin it out.
